Hello and welcome to another Thoughtful Thursday!

I'm Erana Tupaea and I am a chiropractor at our Tooting clinic. So we are well and truly into the groove of isolation… this new life is weird and strange, but there is some comfort in knowing that everyone (nearly the whole world!) is going through it together.

Over the past three weeks I have spent a lot of time in my kitchen, discovering new recipes and rediscovering old ones. Here are my favourites, and I hope you enjoy trying them out, too.

Baking bread seems to be very on-trend at the moment. I’ve made this focaccia bread quite a few times and it is definitely a winner. It’s a very low-effort, high-reward recipe that will leave you going back for seconds (and maybe even thirds).

Bon Appétit has a lot of great recipes with 10 ingredients or less that are full of flavour and easy to make. I can highly recommend the Triple-Threat Onion Galette.

Another brilliant recipe that mainly uses pantry staples is this pasta dish by Alison Roman. In fact, it’s multipurpose, too – the sauce can be served as a topping on fried eggs, underneath crispy chicken thighs or over roasted root vegetables like carrots or sweet potatoes. Win-win! Check out Alison’s website for other excellent food inspo, too.

If you’re after something healthier (and want to offset all the carbs), this kale salad really hits the spot. Kale by itself, in my opinion, is awful, but with this dressing it really does shine. Add whatever you want to it (roast vegies, legumes or meat) and enjoy.

There’s something about making your own jams/preserves/relishes that feels very wholesome. So now we’ve got the time to do so, channel your inner Mary Berry and make this lemon curd. Very, very indulgent, but don’t we deserve it?

Lastly, I made my own sushi over the weekend. It’s so much fun, and a great way to get the kids involved in the cooking process. Yes, it can take a little bit of time to get the hang of, but it is definitely worth it. Just find a recipe and give it a go!

I hope these recipes and cooking ideas provide some inspiration and motivation to keep you going while you’re at home.
